WYO'S JAMBALAYA 
2 lbs. onions
2 stalks celery
1 lg. green pepper
1 1/2 lbs. chicken breast (cubed)
1 3/4 lbs. shrimp
1 lb. link sausage (cut into 1 inch pieces)
2 sm. cans tomato paste
1 sm. can tomato sauce
1 tsp. garlic powder
1 tsp. thyme
1 handful chopped fresh parsley
1 tsp. red pepper
1 tsp. black pepper
1 tsp. Tabasco
1/3 tsp. cloves
1/3 tsp. nutmeg

Brown onions, celery and green pepper in butter in a skillet. Dump into large pot. Brown chicken in butter, add thyme and parsley and add to pot. Fry sausage (drain), add to pot. Add tomato sauce and paste and garlic powder to pot. Add spices to taste. Simmer for 2 hours. Add water as needed. Peel and devein shrimp. After the 2 hours add shrimp and simmer 5 more minutes. Serve over rice.
