Preheat oven to 400 degrees. Prepare 24 muffin cups.
Mix until smooth, then cool: 1/2 cup cocoa, 1 cup hot water. Mix 1 2/3 cups of flour, 1 1/2 cups sugar, 1/2 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt. Then add 1/2 cup shortening (or oil) and the cooled cocoa mixture.
Beat 2 minutes medium speed. Add 2 eggs, beat 2 more minutes. Pour batter in muffin tins half full. Bake 15 to 20 minutes.
This is a real simple cupcake but is very good. This is before cake mix. But is as simple as cake mix.
