BREAKFAST SOUFFLE 
2 (8 oz.) cans green chilies
3 eggs
3 c. milk
2 c. Bisquick
1 lb. grated cheddar cheese
1 lb. diced ham, bacon or Italian sausage, cooked, drained & chopped

Grease 9 x 12 inch pan. Spread chilies in bottom of pan. Beat eggs. Add milk and Bisquick. Mix. Add cheese and meat. Pour over chilies. Bake at 350 degrees for 1 1/2 hours. Can freeze AFTER baking.
