OATMEAL BREAD 
1 pkg. active dry yeast
2 c. rolled oats
1 tbsp. sugar
2 c. warm water
1 tbsp. salt
1/3 c. honey
3 tbsp. vegetable oil
2 1/2-3 c. flour (unbleached or bread flour)

Place yeast, oats, sugar and water in mixing bowl. Stir, cover and let set in warm place for 1 hour.

Add salt, honey, oil and 1 cup of the flour, stir or beat - I use electric mixer, for 2 minutes. Add remaining flour as needed, a half cup at a time. Stir with spoon until dough can be kneaded. Knead for 10 minutes, use more or less flour as necessary to make a dough you can work with.

Place in greased bowl, cover, let rise until double. Punch down, divide in 2 and let rest on floured surface, covered, for 5 minutes. Shape into 2 loaves. Place in greased bread pans. Let rise until double. Bake at 400 degrees for 20-25 minutes. Makes 2 loaves.
