MOCHA MARBLE CHEESECAKE 
CRUST:

2 c. chocolate wafer crumbs
3/4 tsp. cinnamon
2/3 c. melted butter

FILLING:

6 eggs
3/4 c. honey
1/8 tsp. salt
1 1/2 c. very strong coffee
1 1/2 tsp. vanilla
2 c. heavy cream
1/2 c. flour
6 c. cream cheese, softened
8 oz. semi sweet chocolate, melted

Crust: Combine crumbs, cinnamon and butter. Press into bottom and sides of a spring form pan. Chill thoroughly.

Filling: Beat eggs until lemon colored. Slowly add honey, salt, coffee and vanilla. Whip the cream and fold into the egg mixture. Fold the cream cheese and flour into egg mixture. Add chocolate and make a few strokes with a fork to marblize the mixture. Pour into chilled crust.

Bake at 350 degrees for 1 hour and 25 minutes. Turn off heat and allow cake to stay in oven another hour with the door open. Chill.
