FRESH VEGETABLE OMELETTE 
2 tbsp. butter, divided
1 sm. onion, sliced
1/2 c. chopped green pepper
1 sm. zucchini, sliced
1 med. tomato, chopped
1/4 tsp. salt
1/4 tsp. dried whole oregano
1/8 tsp. pepper
4 eggs, separated
1/4 c. water
1/2 tsp. cream of tartar
1/2 c. shredded sharp Cheddar cheese

Melt butter (1 tablespoon) in skillet, add onion and green pepper. Cook until tender. Then add zucchini, tomato, salt, oregano, pepper. Cook until vegetables are tender and liquid is gone. Keep warm.

Beat egg white, water, cream of tartar until stiff, but not dry. Beat egg yolks and fold together. Heat skillet until hot, cook medium heat for 5 minutes and bake at 350 degrees for 8 to 10 minutes, add vegetables and fold in half. Sprinkle cheese over top.
