OATS FRUIT LOAF 
2 tsp. dry yeast
1 c. lukewarm water
1 1/2 c. oats
1 1/2 c. boiling water
2 tsp. salt
4 1/2 c. all-purpose flour
3 tbsp. brown sugar
3 tbsp. butter, melted
1 c. chopped dates
4 tbsp. chopped nuts
1/2 c. oats

Add yeast to lukewarm water and leave until bubbles form on the surface. Add oats and salt to boiling water. Cook for 3 minutes and leave to cool. Add 2 1/2 cups of flour and the brown sugar as well as the yeast to the oats to form a dough; leave to rise well. When doubled in size, add rest of flour and knead well. Then roll out the dough, on a lightly floured board, until 1/2 inch thick. Brush 3/4 of butter over dough. Now spread dates and nuts over. Roll up like a jam/Swiss roll. Brush the roll with rest of butter and roll it in the oats.

Put in a greased loaf pan. Cover and let rise until volume doubles. Bake in a warm oven, 350 degrees for 45 minutes. Variation: 1/4 cup of marmalade can be used instead of the dates.
