MICROWAVE PEANUT BRITTLE 
1 c. granulated sugar
1/2 c. light corn syrup
1/8 tsp. salt
1 c. raw peanuts
1 tsp. butter
1 tsp. vanilla extract
1 tsp. baking soda

In a 1 1/2 quart casserole dish, stir together sugar, syrup and salt. Stir in peanuts. Cook on high power for 4 minutes. Stir and cook 4 minutes more. Add butter and vanilla. Mix well. Cook on high 1 minute. Add baking soda and stir quickly (this will foam up to near the top of the bowl.) Immediately pour it on a lightly buttered large shallow pan. Cool. Break into pieces and store in tightly covered container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
