PEANUT BRITTLE MICROWAVE 
1 c. sugar
1 c. roasted salted peanuts
1 tsp. baking soda
1/2 c. corn syrup
1 tsp. butter
1 tsp. vanilla

In a 1 1/2 quart casserole, blend sugar and syrup, place in microwave on high for 4 minutes. Stir in peanuts. Microwave for 3-5 minutes until mixture is slight brown in color. Add butter and vanilla. Blend well. Microwave on high 1-2 minutes longer. Remove from oven. Add baking soda, gently stir until foamy. Pour mixture onto a lightly greased cookie sheet. Cool 1/2-1 hour; then break into pieces. Makes 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
