BAKED RICE PUDDING 
1 c. reg. white rice, uncooked
1 2/3 c. evaporated milk
1 1/4 c. water
1/4 tsp. salt
1/8 tsp. nutmeg
2 tbsp. butter
1 tsp. vanilla
1/2 c. brown sugar

Combine all ingredients in 1 1/2 quart casserole dish. Mix well, cover and bake at 325 degrees for 1 1/2 to 2 hours or until liquid is absorbed and rice is tender. Serves 6.
