"CREAM" OF BROCCOLI SOUP 
1 bunch fresh broccoli, chopped
1 tbsp. vegetable oil
1 sm. onion, minced
1 clove garlic, minced
2 c. chicken broth (fat removed)
2 c. low-fat or skim milk
Pepper to taste

In large saucepan or Dutch oven, saute onion and garlic in vegetable oil until onions are clear but not browned. Add the broth and bring to a boil. Add the broccoli, reduce heat, cover and simmer until broccoli is tender (about 10 minutes). Remove from heat. Add milk and seasoning. Puree in blender. Reheat in pan prior to serving. Serves 4.
