SUPER YUMMY MUFFINS 
1 (15 oz.) can 100% pure pumpkin (Libby's)
1 box cake mix (your choice)

Preheat oven to hot (400°F). You can use cupcake papers or grease muffin pan.

In a large bowl mix cake mix and pumpkin with a metal whisk or electric beater until well blended.

Use an ice scream scoop to put the mixture into each cup (one scoop is good).

Bake at 400°F for 20 minutes. Let cool until you can touch the pan.

Variation: For mini-muffins pans, cut the baking time in half but not the temperature.

These muffins are wonderful, and I especially love making them in the Fall with spice-flavored cake mix. They're very moist, and since they require no oil and have the added pumpkin, are healthier than your average muffin, too! They're also very versatile, since a variety of cake mixes can be used. To fancy them up a bit, chopped walnuts or pecans or flavored mini chips can be added, or a powdered sugar glaze drizzled over the tops. You can also make them jumbo-sized--just bake them a little longer--about 20-24 minutes. One of the best recipes out there with such minimal ingredients!
