SPINACH ALA GENOVESE | |
2 pkg. frozen chopped spinach 1/3 c. seedless raisins 1/4 c. butter 2 tbsp. pine nuts 2 tbsp. chopped parsley 1/4 c. chopped onions 1/2 tsp. nutmeg Thaw spinach and squeeze dry. Soak raisins in warm water; drain. Saute spinach in some of the butter. Add pine nuts and parsley. Saute onion in the rest of the butter and add onions and nutmeg to spinach. Cook 5 minutes, stirring, until water evaporates. Serves 4. |
