OLD FASHION OATMEAL COOKIES | |
3/4 c. white sugar 3/4 c. brown sugar 3/4 c. shortening 2 eggs 1 tsp. vanilla 1/2 box instant vanilla pudding (dry) 1 c. raisins 1 1/2 c. water 2 1/2 c. flour 1/2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. cloves 2 c. rolled oats 1 c. nuts Boil raisins in water for 10 minutes. Set aside. Cream together sugars, shortening, eggs and vanilla. Add the liquid from the raisins plus enough water to make 1/2 cup liquid. Mix well. Mix flour, baking powder, soda, salt and spices. Add to creamed mixture. Stir in 1/2 box instant vanilla pudding mix (dry). Stir in the oats, raisins and nuts. Drop onto slightly greased pan. Bake for 12 to 14 minutes at 350 degrees. These will stay soft for several days. Makes 4 to 5 dozen. |
