GOUGERE PUFFS (MAKES 20
APPETIZERS)
 
1/2 c. hot water
1/4 c. butter
1/8 tsp. salt
1/8 tsp. sugar
1/2 c. all purpose flour
3/4 tsp. dry mustard
Dash of cayenne pepper
2 eggs
1/2 c. (2 oz.) shredded Swiss or Cheddar cheese

In small saucepan combine water, butter, salt and sugar. Stir until butter melts and mixture boils. Vigorously stir in flour, dry mustard and cayenne all at once. Stir over medium heat until mixture leaves sides of pan.

Remove from heat. By hand, stir in eggs one at a time until blended. Stir in cheese. Drop by teaspoonsful onto greased baking sheet. Bake at 450 degrees for 10 minutes; until puffed and golden.

Turn off oven and let puffs remain inside 3 minutes more. Serve hot.
