CRUST: 1/3 c. butter 1/3 c. packed brown sugar 1 c. flour 1/2 c. finely chopped pecans Prepare crust by blending butter and sugar together; add flour and pecans, mixing well. Press crumbs into greased 9"x13" pan. Bake 12 minutes at 350 degrees. CHEESECAKE LAYER: 8 oz. cream cheese, softened 1/4 c. sugar 1 egg 2 tbsp. milk 1 tbsp. lemon juice 1/2 tsp. vanilla Beat cream cheese and sugar together; beat in egg, milk, juice and vanilla. Spread over crust. TOPPING: 2 eggs 3/4 c. dark corn syrup 1/4 c. brown sugar 3 tbsp. flour 1 tsp. vanilla 3/4 c. coarsely chopped pecans Beat eggs until foamy. Add remaining ingredients and mix well. Spoon over cheesecake layer. Bake at 350 degrees until lightly browned, 25 minutes. Cool in pan. Makes 24 (2") squares. |
