SPICY RICE AND BEANS 
1 cup uncooked rice
2 cups water
1 (15 oz.) can black beans
1 cup salsa
1 grated carrot
4 garlic cloves
2 habanero peppers
1 tsp. cumin
1 tsp. onion powder
1 tsp. allspice
1/2 tsp. cayenne pepper
1/2 tsp. thyme
1/2 tsp. salt
fresh ground black pepper
few dashes hot sauce (I use Cholula)
1 tsp. extra virgin olive oil (EVOO)

Heat the olive oil in a pan and add the uncooked rice, stir and heat until it starts to brown. Then add the water and all the spices and garlic. Cook until water is mostly evaporated. Then add the carrots, habanero, salsa, and beans and heat through.

Serve with your favorite hot sauce.
