LO CHOLESTEROL CRUSTLESS CRAB
QUICHE
 
1 c. liquid egg substitute
8 oz. evaporated skim milk
1/3 c. minced onion
1/4 tsp. salt
1/8 tsp. cayenne pepper
7 1/2 oz. crab (I use the frozen imitation)
1 c. shredded Swiss cheese
1 tbsp. chopped parsley

Mix egg substitute, milk, onion, salt and cayenne. Set aside. Spray 8 inch quiche dish with vegetable spray. Sprinkle with crab and cheese. Pour egg mixture over top and sprinkle with parsley.

Bake 15 minutes at 425 degrees. Reduce temperature to 300 and bake 35 minutes more. Let rest 10 minutes before cutting.
