CHINESE CHICKEN SALAD 
3 c. shredded cooked chicken
1/2 head lettuce, shredded
1 carrot, sliced julienne
1 egg, slightly beaten (cooked, cooled, sliced thin)
1 tbsp. sesame seeds (for garnish

SAUCE:

3 tbsp. Hoisin sauce
2 tbsp. wine vinegar
2 tsp. sugar
2 tsp. soy sauce
2 tsp. sesame seed oil
2 oz. cellophane noodles

Available at Oriental grocery stores.

In a deep skillet heat 2 inches of oil. Add 2 ounces cellophane noodles (noodles will puff instantly if oil is hot enough). Remove immediately; set aside.

Combine sauce ingredients; set aside. On a platter arrange the following: Cellophane noodles, shredded chicken, shredded lettuce, sliced carrots, sliced egg. Pour sauce over all and sprinkle with sesame seeds.
