WILD MEAT STEW | |
1 1/2 lbs. wild meat--mix is better--cut into sm. pieces 1/4 c. flour 1/4 c. oil 2 1/2 c. water 2 tbsp. chopped parsley 1 clove garlic, minced 1 bay leaf 2 tbsp. salt 1/2 tsp. dried thyme 1/4 tsp. pepper 4 potatoes peeled and cubed, rutabagas can be substituted for taste 5 carrots, cut in sm. pieces 3 stalks celery, cut in sm. pieces 2 onions, cut in sm. pieces 1/2 bell pepper (optional) 1/2 turnip (optional) 1 parsnip (optional) Coat meat cubes and brown in oil. Cover with water and simmer for 20 minutes. Add parsley, bay leaf, garlic, salt, thyme and pepper. Simmer one hour or until meat is tender--add more water if needed. Add vegetables. Cook an additional hour or until vegetables are tender. |
