1 lb. round steak, cut into 1/2 inch cubes 1 lb. flank steak, cut into 1/2 inch cubes 1 lb. ground round 2 (20 oz.) cans tomato sauce 2 tbsp. chili powder 1/2 lb. Italian sausage, cut up 1 lg. red onion, chopped 1 lg. white onion, chopped 1/4 c. fresh parsley, chopped 2 lg. tomatoes, chopped 1 clove garlic, chopped 1 tsp. salt 1 tsp. pepper 1 tbsp. cumin 2 tsp. oregano Brown round steak in pan. Remove. Brown flank steak in same pan. In separate pan, brown ground round. In gallon-size kettle, bring tomato sauce to a simmer. Add chili powder and sausage. Simmer until broken down (approximately 15 minutes). Add round steak and simmer 10 minutes. Add flank steak and simmer 10 minutes. Add ground round and simmer 10 minutes. Add onions, parsley, tomatoes and garlic. Simmer 30 minutes. Add remaining seasonings. Serves 6 to 8 hearty eaters. |
