WEST VIRGINIA CORN BREAD 
1 c. cornmeal
1 c. whole flour
1/4 c. oil
1 sm. onion, chopped
1-2 c. milk
1/4 c. sugar
1/2 c. grated sharp cheese
1/2 c. creamed corn
1/4 tsp. salt
2 tsp. baking powder

Options:

1/8 tsp. red pepper flakes or green peppers, chopped

In an iron skillet, heat 2 tablespoons Crisco. Melt until almost smoking. Pour batter into skillet. Bake 30-35 minutes at 375 degrees. Nice and crunchy crust!
