GERMAN POTATO DUMPLINGS (GLAZE) 
4-5 large potatoes, cooked and mashed
1 egg
salt and nutmeg, to taste
bread crumbs
freshly prepared buttered croutons

To the mashed potatoes, add egg and seasonings, blend mixture well. Gradually add bread crumbs until the potatoes are firm but still tender. With floured hands, wrap a ball of potato around 4 croutons, seal, then do all mixture. Put on foil-lined cookie sheet, very generously buttered, cover with more buttered foil.

Bake at 350°F for 1/2 hour or until warmed through. Serve with melted butter or gravy.
