BLUEBERRY MUFFINS 
2 1/2 c. sifted flour
1/2 tsp. baking soda
1/2 c. sugar
2 eggs, beaten
1 1/2 c. washed fresh or frozen blueberries
2 1/2 tsp. baking powder
1/4 tsp. salt
1 c. buttermilk
1/2 c. butter, melted

Mix and sift dry ingredients and add sugar. Add buttermilk, eggs, and butter. Mix only until dry ingredients are dampened. Fold in berries. Spoon into greased muffin pans, filling about 2/3 full. Sprinkle with sugar. Bake in hot oven at 400 degrees for 20-25 minutes.
