LOW CALORIE SWEET SPICED PICKLES | |
5 lbs. sm. cucumbers 1/2 c. salt 5 c. water 2 c. distilled white vinegar 3-4 tbsp. artificial sweetener 1 tsp. cinnamon 1/4 tsp. ground allspice 1/4 tsp. ground cloves 1. Scrub cucumbers, place in bowl with salt and 3 cups water. Let stand 24 hours. 2. Drain and rinse in cold water, then drop into boiling water and drain. 3. Pack cucumbers into sterilized jars. 4. Combine vinegar with remaining 2 cups water, sweeten with sweetener and add spices. Bring to a rapid boil. 5. Pour over cucumbers to within 1/2" of top. Seal. Process in boiling water bath 10 minutes. Makes 8 to 10 pints. |
