BASIC QUICHE LORRAINE 
Pastry for single crust 9 inch pie (frozen or your own favorite recipe)
6 slices bacon
1 c. (1/4 lb.) grated Swiss cheese
1 c. milk or half & half
4 eggs, slightly beaten

May add: Salt and pepper to taste Hot sauce or cayenne pepper to taste

Line pie plate with pastry. Preheat oven to 450 degrees. Sprinkle crumbled bacon over bottom of pastry and top with grated cheese. Beat eggs, cream, and seasonings. Pour into pan. Bake at 450 degrees for 10 minutes, then reduce oven to 325 degrees and bake 30 minutes or until custard is firm. Makes 4 to 6 servings. Good with green salad and fresh fruit for lunch or light supper.
