ORANGE SUGARED PECANS 
1 c. sugar
1 tbsp. orange juice
1/2 c. water
Pinch salt
Grated rind of 1 orange
2 c. pecans

Mix sugar and water in pan. Cook without stirring until 238 degrees (soft ball), remove from heat and let stand for 5 minutes. Stir in rind, juice and salt. Add pecans and stir mixture until sugar begins to crystalize. Quickly turn out on cold baking sheets and separate using forks and let cool.
