NEW ORLEAN JAMBALAYA 
1 1/2 lbs. cleaned, raw shrimp
1/2 c. chopped onion
1/4 c. butter
1 tbsp. flour
2 c. chopped, cooked ham
6 oz. tomato paste
1/4 c. chopped parsley
1/2 tsp. garlic powder
2 c. hot water
3 c. cooked rice

Cook onion in butter, add shrimp; saute until pink, stir in flour. Add ham, over low heat, add tomato paste, parsley and garlic powder; gradually stir in water. Cook on low heat, stirring constantly until thickened. Stir in rice; heat thoroughly. Serves 8.
