ZUCCHINI FRUIT BREAD 
3 eggs
2 c. sugar
1/2 c. oil
3 c. flour
1 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
1 c. chopped nuts
2 c. grated zucchini
3 tsp. vanilla
8-10 oz. glazed fruit mix

Beat eggs until foamy. Add oil and sugar. Mix. Sift dry ingredients together and mix into first mixture. Add zucchini, vanilla, and nuts. Mix well. Add fruit mix. Bake at 325 degrees for 1 1/2 hours or until center comes out clean when poked with a toothpick.
