COCONUT COOKIES 
2 c. sugar
1 c. butter, room temperature
2 lg. eggs
2 c. all purpose flour
2 bags sweetened flaked coconut, for decoration
1 c. semi-sweet chocolate chips, melted

Have cookie sheet ready. Beat sugar and butter in a large bowl with electric mixer until fluffy. Beat in eggs. Gradually beat in flour, then coconut until well blended. Form into 1 inch balls; place on ungreased cookie sheet. Heat oven to 325 degrees; bake 12-15 minutes until bottoms are lightly browned. After cookies cool, drizzle melted chocolate on cookies.
