CHOCOLATE COCONUT COOKIES 
1/2 c. soft shortening
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. cocoa
1 c. buttermilk
Vanilla flavoring
Flaked coconut

Cream shortening and sugar until light. Add eggs, one at a time, beating after each. Add vanilla and dry ingredients alternately with buttermilk, beating until smooth. Drop by teaspoon on cookie sheet and bake at 350 degrees for 12- 15 minutes. Cool.

Tint frosting pale green and spread between each 2 cookies and on top. Sprinkle with coconut. Makes about 4 dozen.
