ARTICHOKE - RICE SALAD 
1 1/2 boxes chicken flavored Minute Rice
2 sm. jars Cara Mia marinated artichoke hearts
4 to 5 green onions
1/2 bell pepper
1/3 c. mayonnaise
1 1/2 to 2 tsp. curry powder

Cook rice according to directions, but leave out the butter. Drain the artichoke hearts, saving the liquid. Cut the hearts into fourths or so. Dice the bell pepper. Dice the green onions, using most of the green part. Mix all these together. Add the mayonnaise and the curry powder to the marinade liquid. Pour this mixture over the other and stir.
