MY BEST FRUIT CAKE | |
1/2 lb. softened butter 1 1/2 c. sugar 2 1/2 c. flour 1 1/2 tsp. baking powder 6 eggs 1 tsp. cinnamon 1/2 tsp. allspice 1/4 tsp. nutmeg 1/2 lb. white raisins 2 lb. nuts (walnuts) 1 c. coconut 1 c. cherry preserves (optional) Juice of 1 lemon & 1 orange with 1 tbsp. grated rind from each 1/2 lb. dates 1 1/2 lb. candied pineapple 1 lb. candied cherries 1 c. grape juice (may use orange juice) Cream butter and sugar. Add eggs and then the dry ingredients alternately with the eggs and the juices. Add fruits, nuts and preserves. Bake in loaf pans in slow oven, 300 degrees for 1 hour and 15 minutes or until toothpick inserted into center comes out clean. |
