FRESH HAM - SPANISH STYLE | |
PEPPER FILLING MIXTURE: 2 lg. onions 3 or 4 long green peppers 6 or 7 cloves garlic Parsley Juice of 1 lime 3 or 4 green peppers 1 Jamaican hot pepper Oregano Thyme SPRINKLING MIXTURE: Garlic & onion powder Salt Black pepper 1 bottle Island Kirby Mojo Sauce (vinegry bar-b-que type marinade) 1 fresh ham Make pepper filling mixture by chopping all vegetables in food blender. Make deep holes in ham with sharp knife. Fill holes with the mixture. Stuff well. Wash hands thoroughly after filling. Sprinkle ham with onion and garlic powders, salt and pepper. Then put balance of mixture on top and sides of ham. Put the Kirby Mojo Sauce in bottom of pan. Cook ham at 325 degrees for 25 minutes per pound. At least 1 to 1 1/2 hours according to size. Baste ham every 20 minutes. NOTE: The pepper mixture can be regulated by the strength of the hot pepper used. Also, this mixture can be frozen for future use. It is a good flavor base for other dishes. To refrigerate add a little vegetable oil. |
