PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt

Beat eggs on high; mix in sugar, pumpkin and lemon juice. Mix together flour, baking powder, cinnamon, ginger, nutmeg and salt. Add to pumpkin mixture. Bake on a greased and floured cookie sheet for 20 minutes at 350 degrees.

Sprinkle towel with powdered sugar. Put mixture on towel. Roll up and let cool. Unroll and ice and roll back up.

ICING:

1 c. powdered sugar
6 oz. cream cheese
1 tsp. vanilla
1 c. nuts
