SQUASH CASSEROLE 
1 egg, slightly beaten
1/2 onion, chopped
1 can cream of mushroom soup
2 c. boiled squash
2 c. shredded Cheddar cheese
1/4 c. butter, melted
1/4 c. crushed Ritz crackers

Combine first 5 ingredients. Place in greased casserole dish. Mix together crackers and butter. Sprinkle over top of casserole. Bake at 350 degrees for 30 minutes.
