BANANA CREAM PIE 
1/2 c. evaporated skim milk
3 eggs
Dash of salt
3/4 tsp. vanilla
1 1/4 c. 2% milk
Artificial sweetener equivalent to 1/3 c. sugar
1 c. sliced bananas
1 tbsp. lemon juice

Beat eggs with salt and evaporated skim milk until well mixed. Add milk and artificial sweetener. Cook in top of double boiler until mixture is consistency of soft custard. Add vanilla; mix well and remove from heat.

Toss sliced bananas with lemon juice and arrange in bottom of 9-inch graham cracker crust, reserving several slices for garnish. Pour custard mix over the bananas. Arrange reserved slices on top and chill until well set.
