TURKEY MEATLOAF 
2 lbs. ground turkey (93% fat free)
1 c. bread crumbs OR stuffing mix
1 med. onion, finely chopped
1 lg. apple, cored, peeled and chopped
3/4 c. chopped celery
1/4 c. chopped walnuts (optional)
1 egg and 1 egg white beaten with 2 tbsp. milk
1 tsp., poultry seasoning
1 tsp. salt
1/2 tsp. freshly ground pepper

Preheat oven to 350 degrees. Assemble all ingredients and put the meat in a large mixing bowl. Ground meat is easier to handle at room temperature. Mix all the ingredients thoroughly with your hands. Form a roll and place it in a shallow baking pan or loaf pan. Bake for 1 hour. Remove from the oven and allow to cool slightly before slicing.

Serving suggestion: Place the loaf on a heated serving platter surrounded by cooked carrots, potatoes, broccoli florets. Serve with cranberry sauce. Makes 8 servings.
