EGGPLANT PARMESAN 
1 lg. eggplant, sliced 1/4 inch thick & peeled
1 pt. Ricotta cheese
Tomato sauce
4 eggs
Bread crumbs
Grated cheese, any type you like

Heat oven to 375 degrees. Dip eggplant in egg then cover with bread crumbs. Bake on greased cookie sheet approximately 10 minutes or until bottom is golden brown, flip. Grease a 9 x 12 inch baking pan. Put layer of eggplant, layer of tomato, layer of Ricotta then layer of eggplant; cover with grated cheese, Parmesan cheese on top. Lower oven to 350 degrees. Bake 45 minutes to 1 hour until heated through and bubbly.
