MEAT BALL VEGETABLE SALAD | |
3/4 lb. ground beef 1/2 tsp. each garlic salt, seasoned pepper 1/4 c. oil 1/2 lb. zucchini, thinly sliced 1/4 c. cider vinegar 1 clove garlic, minced 6 c. coarsely chopped lettuce 1 lg. tomato, cut into wedges 3/4 c. onion rings Combine ground beef, garlic salt and seasoned pepper in bowl, mixing well. Shape into 24 small balls. Brown in oil in skillet. Remove meatballs. Cook next three ingredients in pan drippings until slightly heated. Pour over meat balls in bowl. Chill in refrigerator, stirring occasionally. Combine with lettuce, tomato and onion rings in salad bowl, tossing lightly. |
