MELON BALL SALAD | |
FRUITS IN SEASON: Watermelon, cantaloupe, grapes, strawberries or peaches. Using melon "baller" (or can slice fruit), trim off rind and cut into squares. Add 1 cup pineapple tidbits and 2 to 3 bananas depending on how much other fruit is used. Put in covered bowl. Chill. When ready to serve mix with scoops of lime sherbet. Toss together and serve as salad or as a fresh fruit cup. VARIATION: Marshmallow cream mixed with sour cream and mayonnaise also makes delicious dressing as well as Honey Dressing below. HONEY DRESSING: 2 tbsp. sugar 1 tbsp. flour 1/2 c. honey 1 egg 1/3 c. lemon juice 1 c. whipped cream Combine sugar, flour and honey. Bring to a boil, cook 1 minute, stirring constantly. Beat egg while gradually adding lemon juice. Add a small amount of the honey mixture to the egg; mix well. Return mixture to heat and bring to a boil, stirring constantly. Remove from heat. Cool. Mix with whipped cream and drizzle over fruit. VARIATION 2: If fruit cocktail is used along with other canned fruit instead of fresh fruit fold honey dressing and whipped cream with fruit and freeze. Freezes well. |
