GERMAN APPLE CAKE 
4 c. chopped apples
3 eggs
1 c. vegetable oil
1 tsp. baking soda
1 1/2 tsp. lukewarm water
2 c. white sugar
1 tsp. vanilla
2 c. flour
2 tsp. cinnamon
1/2 tsp. salt
1 c. chopped nuts (opt.)

Beat eggs and oil together until foamy. Dissolve baking soda in water, then add to mixture. Add sugar and vanilla. Add flour, cinnamon and salt. Then add apples and nuts. Beat well. Bake in greased 9"x13" pan at 350 degrees for 50 to 60 minutes.

FROSTING:

3 oz. pkg. cream cheese, softened
1/2 tsp. vanilla
2 tbsp. butter
1 c. powdered sugar

Beat and spread over cake. We also like this cake served with Cool Whip instead of frosting.
