ZUCCHINI RELISH 
10 c. zucchini, chopped in blender, drained
4 c. chopped onions

Mix together with 5 tablespoons salt. Let stand overnight. Pour in colander and wash thoroughly. Drain. 1 green bell pepper, chopped in blender 2 1/4 c. vinegar 5 c. sugar 2 1/2 tsp. dry mustard 2 1/2 tsp. turmeric 2 tsp. mustard seed 2 tsp. celery seed 2 tbsp. cornstarch 1/4 tsp. black pepper (optional)

Bring to a boil all spices. Add zucchini, onions, and bell pepper. Bring to a boil. Simmer for 30 minutes, stirring occasionally. Put in jars and seal.
