HEALTHY BREAKFAST PANCAKES 
1 egg
1/4 c. oil or melted butter
3/4 c. white flour
1/2 c. whole wheat flour
1 c. milk
1/2 c. applesauce or 1 mashed banana
3 tbsp. wheat germ
Optional: any fruit blueberries, apples, pears, (chopped)
1/2 tsp. cinnamon
1/2 tsp. baking powder
Dash salt if desired

Mix all ingredients together in large mixing bowl. heat nonstick griddle. Lightly grease. Pour tablespoon size drops onto hot griddle. Flip pancakes when bubbly on top side. Serve with a dollop of lowfat yogurt and sliced berries, bananas or with butter and syrup.
