ELAINE'S PECAN CRISPS 
1 c. butter, softened
1 tsp. vanilla
1 c. unsifted confectioners' sugar
1/2 c. sifted flour
1/2 c. sifted cake flour
1 (3 oz.) pkg. pecans, coarsely chopped

In a large bowl beat butter, vanilla and sugar with a mixer on high speed, until pale, smooth and light. Beat in flours, then nuts. Spread the batter onto a greased 11 x 15 inch cookie sheet with sides. Make batter thicker on edges. Bake at 350 degrees for 15 minutes (more for crispier crisps). Cool and sprinkle with extra sugar.
