ENCHILADAS 
1 lb. ground round
1 lb. ground turkey
1/2 med. onion, chopped
1/2 tsp. cumin
1 1/2 tbsp. chili powder
2 (8 oz.) cans tomato sauce
1 tsp. lite salt

Brown meat, add onion and cook until tender. Add remaining ingredients. Cook slowly. Warm corn tortillas. Cover bottom of 7 x 11 pan with some of meat mixture. Place spoonful of meat on warm tortilla and 1/8 slice of American cheese. Roll up and place in pan until pan is full. Spread more of meat mixture on top, then sprinkle grated cheese on top. Place in hot oven until cheese melts.

Hint tortillas and meat should be hot when rolling up.
