POTATO SOUP | |
3 med. potatoes, peeled and diced 1 sm. onion, diced 1 c. water 5 c. milk 1 c. flour and 1 c. water, whipped together 2 or more strips bacon, fried and diced 1/8 c. fresh parsley 1 tbsp. chives Salt and pepper to taste Garlic salt to taste 2 tbsp. butter In a kettle boil potatoes and onions in 1 cup water until tender. add milk. Stir in flour and water mixture to thicken. Add bacon, parsley and chives. Season to taste with salt, pepper and garlic salt. Add butter. Let simmer until creamy. Makes 10 servings. If thinner soup is desired, use half the amount of water and flour. |
