POTATO BAKE 
2 lbs. potatoes
2 tbsp. butter
2 tbsp. grated Parmesan cheese
1/2 c. grated Edam cheese
2 eggs
2/3 c. of milk
Sea salt (or regular salt)
Freshly ground pepper

Preheat oven to 375 degrees (190 degrees C). Peel potatoes cut them into even size pieces and boil them until they're tender then drain and mash them. Add the butter, the Parmesan and half of Edam and mix well. Beat the eggs and milk together and gradually add this to the potato mixture stirring well. Season with salt and pepper. Spoon the mixture into a shallow ovenproof dish. Sprinkling the remaining grated cheese on top and bake for 30 to 40 minutes until slightly puffed and golden brown. Goes well with grilled tomatoes and green vegetable.
