CHICKEN FRICASSEE 
1 broiler chicken, cut in pieces or breasts
1 lg. green bell pepper, sliced
1 lg. onion, sliced
2 cans tomato sauce

Remove skin from chicken. Place in large waterless cookware roaster. Put slices of onion and pepper on top of chicken pieces. Salt and pepper. Pour tomato sauce over. Cover with lid and simmer slowly about 1 1/2 hours. Serve over cooked rice.
