SWISS VEGETABLE MEDLEY 
1 (16 oz.) bag frozen broccoli, carrot & cauliflower mix
1 (10 3/4 oz.) can cream of mushroom soup
1 c. (4 oz.) shredded Swiss cheese
1/3 c. sour cream
1/4 tsp. pepper
1 (4 oz.) jar chopped pimientos, drained (optional)
1 (2.8 oz.) can French fried onions

Combine vegetables, soup, 1/2 cup Swiss cheese, sour cream, pepper, pimientos and 1/2 can onions. Pour in 1 quart casserole and bake covered for 30 minutes at 350 degrees. Top with remaining cheese and onion and bake uncovered 5 minutes longer.
